cupcakes, funfetti, chocolate chip, cinnamon

Hello! A few days ago I had some time on my hands (the summer holidays can be quite boring sometimes) so I decided to bake some cupcakes. They turned out quite good and as you can see from the photos they looked quite drool worthy!

On that day I felt a little adventurous so I actually made three kinds of cupcakes. I started out by making a plain batter by using a box cake mix that makes 12 cupcakes and followed the instructions. If you wish to make the batter from scratch you can follow this basic cupcakes recipe. Alternatively you may also use a chocolate cupcake recipe as a base for more taste.

I then split the batter into three bowls so I could add the different ingredients to each one.

Firstly I decided to try out the Funfetti cupcakes which Zoella showed in one of her most recent videos. All you need to do is to add some sprinkles to the mix. I think that these ones looked the prettiest of all three because of how colourful they are, especially when you cut through them!

Next up I made some chocolate chip cupcakes. They are also very easy to make as you only need to add some chocolate chips. I must admit that they did not turn out as good as I should have added more of the chocolate chips or added some coca powder to make the taste stand out more.

The last ones are by far my favorites. They are cinnamon cupcakes which I think are perfect for the season of Autumn. To make these I added 1 tsp cinnamon, 1 tsp all spice and a pinch of sea salt. Obviously you can change these amounts to suit your taste.

The last thing that you need to do is to decorate them which I think is the most enjoyable part! I decided to make some cream cheese frosting and to make it I used:
40g softened butter
125g cream cheese
250g icing sugar
1 tsp vanilla extract

You can go all out and add food colouring to the mixture but I decided to leave it white. I then sprinkled some of the corresponding ingredients to each cupcake so it would be easier to tell which is which.

All in all I am really happy with how they tasted and looked. (my family can confirm that as they were all gone by the evening!)  Definitely the prettiest things that I have ever baked by myself!

What is your favourite kind of cupcake?

Thanks for stopping by :)
