Carrot Cake

Baking is one of my favourite hobbies but I don't get to do it that often. Yesterday I got a little bored so I decided to bake something new. I was always a little unsure about carrot cakes as I had thought that vegetables and cakes didn't really go together but I was in fact really wrong. I loved making it and it turned out really nice. The cake was also a great hit with my family seeing that it was devoured within hours. I used this carrot cake recipe as a base but I'm not one to follow the instructions closely when it comes to baking (such a rebel) and that is why I decided to share with you my own take on this carrot cake. 

Warning: Do not attempt to bake this recipe if you are not prepared to wash the dishes. Trust me. I was definitely not ready for the mess of the aftermath! 

Ingredients


- Coconut oil to grease
- 2 large carrots grated
- 150g self-raising flour
- 75g plain flour
- 1 teaspoon bicarbonate of soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon mixed spice
- 80g brown sugar
- 150ml olive oil/vegetable oil
- 100ml golden syrup
- 3 eggs
- 1 teaspoon vanilla essence
- Handful of walnuts
- Icing sugar

Utensils


- 2 large mixing bowls
- 20cm cake tin
- Whisk
- Wooden Spoon
- Scales
- Measuring cup
- Wire rack

Directions


- Preheat oven at 150C. Peel and grate the carrots and crush the walnuts. Set aside. Sift together the flours, bicarbonate of soda and spices in a bowl and set aside.
- Use a whisk to mix the brown sugar, oil, golden syrup, eggs and vanilla in a separate bowl. Mix until well combined.
- Pour the liquid mixture into the dry ingredients. With a wooden spoon mix the ingredients gently. Add the carrots and walnuts gradually.
- Grease the cake tin with coconut oil and pour in the mixture. Tap the pan to remove the trapped air. Optionally add a few whole walnuts on top.
- The cake takes around 40 minutes to bake but keep a close eye on it. An easy way to check if it's cooked is to insert a skewer and if it comes clean then the cake is done.
- After taking it out set aside for 5 minutes then place on a wire rack and let it cool completely.
- As a topping sift some icing sugar on top.
